Quick Macaroni and Cheese

1 cup | macaroni, uncooked | 250 mL |
4 cups | water | 1 L |
1/8 Tsp | salt | ½ mL |
2 tbsp | flour | 30 mL |
¼ tsp | dry mustard | ~1 mL |
1/8 tsp | pepper | ½ mL |
1 cup | milk | 250 mL |
1 green onion, finely chopped | ||
1 cup | cheddar cheese, grated | 250 mL |
Instructions
- Cook macaroni in boiling, salted water until tender, about 8-10 minutes. Drain and set aside.
- In the meantime, mix flour, dry mustard and pepper in a medium size bowl. Add milk slowly, stirring until smooth.
- Add onion and cheese to the milk mixture.
- Add milk mixture to macaroni noodles and stir to prevent sticking. Cook over low heat until the sauce thickens, about 5 minutes.
Serving Ideas
Toss in ½ cup cooked vegetables, leftover cooked chicken, ground beef, ham or tuna. Or serve with a salad or other vegetables such as carrots, peas or green beans.
