Quick Macaroni and Cheese

Ingredients: Quick Macaroni and Cheese (Makes 3 servings)
Imperial Measurement Ingredient Metric Measurement
1 cup macaroni, uncooked 250 mL
4 cups water 1 L
1/8 Tsp  salt ½ mL
2 tbsp  flour 30 mL
¼ tsp dry mustard ~1 mL
1/8 tsp  pepper ½ mL
1 cup milk 250 mL
  1 green onion, finely chopped    
1 cup cheddar cheese, grated 250 mL

Instructions

  1. Cook macaroni in boiling, salted water until tender, about 8-10 minutes. Drain and set aside.
  2. In the meantime, mix flour, dry mustard and pepper in a medium size bowl. Add milk slowly, stirring until smooth. 
  3. Add onion and cheese to the milk mixture.
  4. Add milk mixture to macaroni noodles and stir to prevent sticking. Cook over low heat until the sauce thickens, about 5 minutes.

Serving Ideas

Toss in ½ cup cooked vegetables, leftover cooked chicken, ground beef, ham or tuna.  Or serve with a salad or other vegetables such as carrots, peas or green beans.
