Energy Bites

Ingredients for Energy Bites (makes 24 balls) 




1 cup

rolled oats (old fashion or other)

250 mL

2/3 cup

toasted coconut flakes, unsweetened

160 mL

1/2 cup

peanut butter

125 mL

1/2 cup

ground flax seed

125 mL

1/2 cup

chocolate chips (optional)

125 mL

1/3 cup


80 mL

1 tbsp

chia seeds (optional)

10 mL

1 tsp

vanilla extract

5 mL


  1. In a medium bowl, stir in all ingredients until thoroughly mixed. Cover and let chill in the refrigerator for 30 minutes.
  2. Once chilled, roll mixture into balls of 2.5 cm (1 inch). Store in an airtight container and keep refrigerated for up to 1 week or freeze balls for up to 3 months.

Variation: Try other types of nut or seed butters instead of peanut butter. Substitute chocolate chips for dried fruit.
