Decadent Energy Balls

Ingredients for Decadent Energy Balls- Makes 36 balls
Imperial Measurement Ingredient Metric Measurement
3 cups Medjool dates, pitted 750 mL
1/4 cup shredded coconut, unsweetened 60 mL
3/4 cup almond butter, or other nut butter of choice 175 mL
1/2 tsp salt 2 mL
2 tsp vanilla extract 10 mL
about 1 cup 70% dark chocolate or chocolate of choice 250 mL


  1. In food processor, purée dates to a paste. Add a tablespoon of water at a time if purée is too thick.
  2. In a bowl, mix together pureed dates and all other ingredients except chocolate. 
  3. Form into balls (1 inch or size preferred) and place on baking sheet lined with a parchment paper. Chill in the refrigerator while making next step.
  4. Melt chocolate in a double boiler. You can melt in the microwave, but stir every 30 seconds.
  5. When chocolate is melted, dip each ball into melted chocolate and place back on the baking sheet. If you need more chocolate you can always melt more.
  6. Place balls in refrigerator or freezer to harden. Store in an airtight container and keep refrigerated for up to 1 week or freeze balls for up to 3 months.
