about 1 cup | 70% dark chocolate or chocolate of choice | 250 mL |
Instructions
- In food processor, purée dates to a paste. Add a tablespoon of water at a time if purée is too thick.
- In a bowl, mix together pureed dates and all other ingredients except chocolate.
- Form into balls (1 inch or size preferred) and place on baking sheet lined with a parchment paper. Chill in the refrigerator while making next step.
- Melt chocolate in a double boiler. You can melt in the microwave, but stir every 30 seconds.
- When chocolate is melted, dip each ball into melted chocolate and place back on the baking sheet. If you need more chocolate you can always melt more.
- Place balls in refrigerator or freezer to harden. Store in an airtight container and keep refrigerated for up to 1 week or freeze balls for up to 3 months.
